So I tried another new, healthy recipe today and it turned out AMAZING! It’s literally all gone already (even though it made a huge batch), the boys ate it all up! It was supposed to be soup, but turned more into stew (oops), after I left the house and left it in the crock pot on high for a few hours. Either way, it’s amazing. Follow the recipe below! Ps. we also had whole wheat fresh buns with it… delicious!
Ingredients: 1 tbsp extra virgin olive oil | 1 onion minced | 3 large carrots peeled and diced | 1 rib celery diced | 1 tsp minced garlic | 5 cups low sodium chicken broth | 2 cups of brown rice | 1 tsp salt | 1/4 tsp black pepper | 2 tbsp fresh dill | 1 cup cashew milk | 1-2 cups chopped chicken
*For the chicken, we bought a roast chicken and threw it in without the skin (so good!).
Directions: Cook the rice, and make sure the chicken you use is fully cooked. Throw all of the ingredients together in a slow cooker, and cook on medium until vegetables are soft. Serve, and enjoy!
