Happy Wednesday loves! We have had a crazy busy week of getting last minute things done before we head to Hawaii. We are going for just over two weeks, and when we come home it’s CHRISTMAS! So anything that we need to prepare for Christmas, we have to do it now! This is our last few days to get any of that done. I’ve had so many of you asking me lately what I feed my kids for healthy and easy meals, so I decided to do a whole blog post on healthy breakfast options that my kiddos LOVE. These are all so healthy for your kids, but also so delicious. These are things that I make for the boys, but Haden and I enjoy them as well, so they are great for the whole family! Kids are definitely trickier to feed, so I came up with these simple recipes that contain healthy fats, proteins and carbs, all while being delicious, and a great start to your kids days! The recipe pictured above is our healthy french toast. I’ve added that recipe along with others as well! The boys love all of these, but I make sure to switch it up so that they don’t end up getting sick of anything! I’m not writing exact recipes for all of them, as these are usually ones that can just be eye-balled. Depending on the amount of people that you are cooking for, you can change it up to your liking! Feel free to swap out any ingredients as well.. for example if you want raspberries instead of strawberries. Or if you want both, do both! These are easy and fun to play around with.
HEALTHY FRENCH TOAST
ezekial bread/eggs/cashew milk/cinnamon/bananas/strawberries
In a bowl or plate, I mix up the eggs, a dash of cinnamon and a splash of cashew milk. I dip the bread in the mixture and make sure every inch has been dipped. Then I just fry each side for a few minutes until the eggs are cooked. I top off the french toast with fruit. Typically I do bananas and strawberries. The boys don’t have syrup or honey added, as the cinnamon already gives it a really delicious taste! Super easy!
SLOW COOKED PEANUT BUTTER BANANA OATS
slow cooked oats/flaxseed/natural peanut butter/cinnamon/bananas (or blueberries- Layker loves them)
I cook the slow cooked oats in water on the stovetop. Once they are fully cooked, I add in the rest of the ingredients. This one is super simple and you can really just add in whatever you want! The flaxseed is so healthy and the kids can’t even taste it in there! I love to add a big spoonful of natural peanut butter for some extra fat.
This is something that I rarely do because its rare that I need to wake up and get out of the house right away. But the boys love just having a simple blueberry or peanut butter lara bar with a banana!
OVERNIGHT BREAKFAST PARFAIT
any fruit of your choosing, we usually do raspberries, blueberries and banana/plain greek yogurt/oats/honey
In a container I mix up some dry oats, plain greek yogurt and a whole bunch of different fruits. I leave it overnight in the fridge so that the oats soak up and fill out. In the morning I add a bit of honey and voila! Breakfast is served! It’s also so nice sometimes making breakfast the night before, so that you can just get up and eat!
1 banana/2 eggs/1tbsp flaxseed/1 tsp cinnamon/1/3 cup oats
I got this recipe from my sister-in-law, Stacey. Her girls love this! This again is a super simple recipe. You mix these up in a bowl and fry them! Beckam really dislikes eggs, so this is a great way that I get them into him. He can’t taste them and doesn’t get that egg texture. This is definitely one of their favourites!
